PASTRY AND
SPECIALTY BAKING
- This certificate develops basic and advanced skills in pastry and specialty
baking. Decoration is deeply emphasized. Production in cakes, danish, French
and Swiss pastries, fancy desserts, confections, tortes, fillings, specialty
breads, decoration, sugar and chocolate work.
Graduates are
prepared for production in the retail and wholesale sector. The student
must successfully complete a production performance test to be eligible
for a certificate.
